Pink-orange color in aroma and taste, first of all, red fruit in the background, apple, pear, citrus fruit notes of stone, earthy, chalk, ginger, white pepper, savory grass, well-balanced, medium acidity, crisp mineral, well-arranged bubble, great wine as an aperitif.
A blend of 80% Baga and 20% Bical harvested early from assorted vineyards in Bairrada (the three “Bs” of the title). Primary fermentation with indigenous yeasts; base wine is unfined and unfiltered. Secondary fermentation via traditional method in bottle followed by nine months’ aging sur lies before disgorgement. No dosage.
A 75/25 blend of red-skinned baga and white bical, this is a rich sparkler that brings to mind a shellfish broth with its vibrant salinity, and a raspberry mousse with its supple, refreshing fruit flavors. It’s creamy, with plenty of acidity and bubble to finish on a lovely, clean fragrance. Pour it with grilled langoustines or other rich shellfish.
